ALMOND AND PASSIONFRUIT MADELEINES

Makes about 18 Madeleines
INGREDIENTS
2 eggs
90 ml (6 Tbsp) castor sugar
125 ml (1/2 cup) flour
30 ml (2 Tbsp) fine almond flour
5 ml (1 tsp) baking powder
90 g butter, melted and cooled
80 g white chocolate, melted
Passionfruit pulp, to taste
Almond flakes, toasted
METHOD
Pre-heat the oven to 180C. Grease 2 x 9 capacity Madeleine tins.
Whip the eggs and castor sugar until light and fluffy for about 4-5 minutes. Sift the flour and baking powder together and combine with the egg mixture. Add the butter and fold through.
Spoon the mixture into the prepared tins and bake for 10-12 minutes or until golden and cooked.
Place the Madeleines on a cooling rack and allow to cool completely.
Dip the madeleines in the white chocolate and drizzle with passionfruit pulp and almond flakes.
