You’ll love this Winter warmer we’ve thought up (and tested) just for you!

We used: Appliances from Breville and Russell Hobbs in this recipe.

  • Prep time: 10 minutes
  • Cooking time: 20 minutes
  • Total time: 30 minutes
  • Serves 4


  • 30 ml (2 Tbsp) olive oil
  • 1 onion, finely diced
  • 1 garlic clove, minced
  • 15 ml (1 Tbsp) fresh thyme, roughly chopped
  • 2 large leeks, roughly chopped
  • 500 g fresh or frozen peas
  • 500 ml (2 cups) vegetable stock
  • 500 ml (2 cups) water
  • Salt and pepper, to taste

To Garnish:

  • 250 ml (1 cup) canola oil
  • 1/2 onion, finely diced
  • 1/2 leek, halved and thinly sliced
  • 30 ml (2 Tbsp) cream
  • 30 ml (2 Tbsp) basil pesto
  • Fresh basil


In a large pot, sauté the onion in the olive oil until slightly translucent. Add the garlic, herbs, and leeks, and cook for a further 10 minutes. Stir in the peas, vegetable stock, water and seasoning and let simmer for 15 – 20 minutes.

Transfer the soup into a blender jug and blend until smooth.

To Garnish:

Heat the canola oil in a medium sized pot and separately fry the sliced onion and leek until crispy.

Drizzle the cream and basil pesto over each portion, sprinkle with the crispy onions and leeks and finish with fresh basil leaves. Enjoy.
