BRAAIBROODJIE WITH A TWIST

8 slices white bread
80 ml (1/3 cup) salted butter, softened
60 ml (1/4 cup) The Cooksister Cherry Tomato Jam
45 ml (3 Tbsp) basil pesto
180 ml (3/4 cup) matured cheddar cheese, grated
180 ml (3/4 cup) mozzarella cheese, grated
½ red onion, thinly sliced
2 garlic cloves, finely chopped
1 ripe tomato, sliced
Salt and black pepper, to taste
Butter each slice of bread on one side only. Lay the bread slices butter side down on your work surface. Spread The Cooksister Cherry Tomato Jam onto four of the unbuttered sides and the basil pesto onto the other four.
Put the cheeses, red onion, garlic and tomatoes on the slices with the cherry tomato jam. Season with salt and pepper, to taste. Close the braaibroodjies with the basil pesto slices so the buttered sides are on the outside.
Braai on a low-medium heat turning constantly for about 6-8 minutes.
