BUCHU-INFUSED GIN COCKTAIL

INGREDIENTS
Edible flowers
1 lime, halved
60ml (1/4 cup) Kaapse Liqueurs Buchu Gin
15ml (1 Tbsp) Symmetry Spice Tonic Essence
250ml (1 cup) elderflower tonic water
250ml (1 cup) sparkling apple juice
60ml (1/4 cup) passionfruit pulp
METHOD
Prepare the ice blocks a day in advance by filling an ice tray with water and edible flowers. Place in the freezer until needed.
Zest one half of the lime and squeeze some lime juice into each glass.
Place flower ice blocks into the glasses.
Top with Buchu Gin, Spice Tonic Essence, elderflower tonic water and sparkling apple juice.
Garnish with passionfruit pulp, lime slices, lime zest and edible flowers.
