BUTTERNUT AND HALLOUMI SKEWERS WITH TAMARIND GLAZE SALAD

Tamarind is a flavour used a lot in South Indian cooking, which is part of my flavour heritage. I love using those sour notes to off-set more modern dishes. This salad is spiced with jeera and dhania seeds as well, so this is a great twist on Indian flavours.

Serves 4

INGREDIENTS

For the Butternut and Halloumi Skewers:

500g butternut, deseeded, peeled and cut into cubes

200g halloumi, cut into cubes

For the Marinade:

15ml (1 Tbsp) brown tamarind paste

5ml (1 tsp) cumin seeds, crushed

5ml (1 tsp) coriander seeds, crushed

30ml (2 Tbsp) sesame oil

1 garlic clove , crushed

Zest and juice

2 limes

1 Thai red chilli , finely chopped

15ml (1 Tbsp) light brown soft sugar

Salt to taste

For the Salad:

±20g fresh coriander, roughly chopped

±15g mint, finely chopped

180g 4-leaf salad bag 

For the Dressing:

30ml (2 Tbsp) avocado oil

15ml (1 Tbsp) red wine vinegar

Salt and pepper, to taste

METHOD

For the Butternut and Halloumi Skewers:

Using 4 metal skewers, thread the butternut with the halloumi, making sure to alternate the ingredients.

For the Marinade:

Using a pestle and mortar, crush the seeds into a coarse mix and combine all the ingredients for the marinade together. Using a pastry brush, apply the marinade to the skewer.

Over a medium braai, place the skewers on for 25-30 minutes, until the butternut is tender and the halloumi has caramelised.

For the Dressing:

Combine all ingredients for the dressing and whisk until emulsified. Season to taste.

Lay the butternut and halloumi over the leaves and serve any extra marinade over the salad.

For the Salad:

Combine all salad ingredients, place the braai’ed skewers on the salad and dress with the quick dressing.
