CHOCOLATE, BANANA AND AVOCADO MOUSSE

Serves 4-6

INGREDIENTS

For the Mousse:

125ml (1/2 cup) dates

125ml (1/2 cup) cashew nuts

125ml (1/2 cup) orange juice

2 ripe avocados, halved, pip and skin removed

3 large bananas

60ml (1/4 cup) unsweetened cocoa powder

100g 80% dark chocolate, melted

To Garnish:

20g dark chocolate shavings

45ml (3 Tbsp) cashew nuts, chopped and toasted

Fresh raspberries, optional

Banana slices, optional

METHOD

For the Mousse:

Combine the dates, cashew nuts and juice in a bowl. Cover with cling film and allow to soak for about 1 hour.

Once the date mixture is soaked, place the soaked dates and nuts and half of the soaking liquid in your Nutri Bullet, along with the avocado, banana, cocoa powder and melted chocolate. Blend until you have a thick and smooth mousse. You may need to blend this in batches if your Nutri Bullet cup is too small. Add the rest of the soaking liquid if necessary.

Dish the mousse into bowls and garnish with chocolate shavings, cashews, raspberries and banana slices.
