COLD ROAST BEEF FILLET

INGREDIENTS

1-1.5kg beef fillet

Salt & pepper

10ml dried thyme

10ml dried rosemary

30ml olive oil

2 cloves garlic, chopped

Hot English mustard, to serve (optional)

METHOD

Preheat the oven to 175C.

Place the fillet in a large roasting dish, add all the other ingredients and coat the fillet evenly.

Let the fillet sit for 30 minutes out of the fridge.

Heat up a large griddle pan and seal off all the sides of the beef fillet until evenly browned.

Place the fillet back into the roasting tray and place into the oven.

Roast the fillet for 25minutes or till the internal temperature is at 48C.

Allow to cool and rest for 15 minutes before slicing.  Serve chilled with hot English mustard.
