FRESH WATERMELON, CHERRY & PROSCIUTTO WREATH SALAD

INGREDIENTS
For Wreath Salad:
¼ watermelon, cut in cubes of 3cm x 3cm
250g buffalo mozzarella, torn
6 radishes, thinly sliced
200g fresh whole cherries
200g prosciutto
Mix of rocket, watercress and baby spinach
For the Cherry Balsamic Vinaigrette:
250g fresh cherries, pitted
80ml (1/3 cup) avocado oil (or any neutral flavoured oil)
45ml (3 Tbsp) white balsamic vinegar
METHOD
For Wreath Salad:
Assemble all components in a wreath on a platter.
For the Cherry Balsamic Vinaigrette:
Combine all the ingredients in a bowl and whisk until well combined and emulsified.
Serve with the wreath salad.
