GARAM MASALA PETIT POUSSIN

Cauliflower rice has become a staple at my place because you get all the effects of rice without the extra starchy calories. It is also a great way to include an additional vegetable in your diet.

Serves 4

INGREDIENTS

For the Garam Masala Chicken:

2 x petit poussin, spatchcocked

60ml (1/4 cup) garam masala

4 cloves garlic, crushed

2 lemons

Salt, to taste

60ml (1/4 cup) coconut oil, melted

For the Cauliflower Savoury Rice with Charred Veggies:

800g cauliflower, grated

30ml (2 Tbsp) coconut oil, melted

To Finish:

30ml (2 Tbsp) coconut oil

1 cardamom pod

30ml (2 Tbsp) chicken stock

6 strands saffron

125ml (½ cup) cashew nuts, toasted

500g roasting vegetables

Salt, to taste

METHOD

For the Garam Masala Chicken:

The night before, spatchcock the birds and make slashes in the thighs. Mix the garam masala with the garlic cloves, juice of 2 lemons, salt and coconut oil. Baste the birds in this mixture and allow to marinate over night.

To eat, heat braai to medium with all the coals to one side of the braai stand. Place birds skin side down on the side of the braai with the hot coals for 2-3 minutes. Then move them to the side of the braai without the hot coals for 15-20 minutes. Allow to rest for 5-10 minutes before carving.

For the Cauliflower Savoury Rice with Charred Veggies:

Heat oven to 180°C.

Mix grated cauliflower with the coconut oil and salt. Spread in a single layer onto a baking sheet. Bake for 15-20 minutes.

Before serving, heat the coconut oil in a pan with the cardamom and cauliflower rice. Heat the chicken stock with the saffron.

Once the saffron starts to colour the liquid, pour into the cauliflower rice. Mix through and taste for salt. Once the liquid has evaporated, toss in the toasted nuts.

Thread the roasting vegetables onto skewers and season. Char on a hot braai.

To Serve:

Lay the cauliflower rice on the bottom, place the birds on top and finish with the vegetables.
