A hearty meal is not something you have to compromise on in the midst of a busy schedule. We suggest going gourmet, Monday through Friday, with these five luxury lunches you can take to work. So throw on a cheeky apron and dive straight in.
Sweet potato and avocado sandwich with poppy seed spread
Epicurious gives us this easy-to-make, low-fat, high-fibre sandwich that’ll make anyone even remotely close to your desk a little jealous. What’s great about this sandwich is that it’s quick to make, will leave you satisfied and it is really healthy. You can eat it as soon as you make it or, if you store it right, you can have it much later.
Ham and cheese pocket pastries
Dessert now, dinner later details how to fashion a tasty pastry or two. These pocket-sized delights are small enough to snack on and filling enough to serve as a lunch if you munch more than just a few. Throw some baby tomatoes, avocado slices or a mini Greek salad in to your lunch box if you’re after a balanced meal.
The final touch of your pocket pastries will be to get them a golden brown colour when cooking. How? By simply brushing the surface of the pastries with a slick pastry brush and a whisked egg.
Add 3 slices of ham, 1 slice of cheese (folded in half), and a bit of mustard (smeared) to half of each square
Then brush a whisked egg on the edges of the half of the square with meat and cheese with this pastry brush, so you can fold over the top and seal the edges
Fold over the top half of the dough and pinch the edges or crimp them with a fork to seal the dough together
Place pockets on a parchment or silicone lined baking sheet on this quantum baking tray
Cut a few slits on top of each pocket with a knife for ventilation, and then brush the tops with the whisked egg
Bake at 200 degrees Celcius for 15 to 25 minutes

86 Lemons has a way of combining simple ingredients to make a phenomenal taste explosion. All you’ll need to make this scrumptious salad possible, is a Nutribullet juice blender, a frying pan, a salad bowl and servers and some salt and pepper seasoning.
