GRILLED HALLOUMI & SMASHED AVOCADO SANDWICH

INGREDIENTS
- 15ml olive oil
- 1 block halloumi, cut into ½ cm thick slices
- 2 lemons, halved
- 2 avocados
- Salt & pepper
- 4 brown seeded rolls
- ¼ red onion, finely sliced
- Microherbs
METHOD
Heat the grill pan on a high heat and brush the olive oil over it.
Once hot, add the halloumi slices and allow them to colour nicely on both sides. Remove the halloumi from the pan once grilled, and squeeze over the juice of 1 lemon. Keep aside.
Halve the avocados, discard the pips, and scoop the flesh out of the skin and into a bowl, discarding the skin. Squeeze the juice from the other lemon over the avocado. Using a fork, mash the avocado until chunky. Season to taste with salt and pepper.
Halve the
seeded rolls and smear the smashed avocado over the base of each. Top it will
the grilled halloumi and red onion slices. Garnish with a bunch of microherbs
and serve.
