HOMEMADE VEGETABLE PULP BURGERS
These simple homemade burgers are made with vegetable pulp for added texture and goodness. Delicious and guilt-free!
Ingredients
Patties
400g ground beef
1 cup vegetable pulp, liquid drained
2 tbsp olive oil
1 tsp salt
2 tsp chilli flakes
1 tbsp ground cumin
1 clove garlic grated or crushed
1 onion diced
5-6 tbsp breadcrumbs
2 eggs
Coleslaw
1 cup mayonnaise
1 cup heavy cream
3 cups coleslaw mix
Pickled onions
1 medium red onion, sliced thinly
½ tsp sugar
½ tsp salt
¾ cup rice vinegar, white wine vinegar or apple cider vinegar
Other
Grated mozzarella cheese
Burger buns
Method
1. Place all the burger ingredients in a large mixing bowl and mix together
2. Divide mixture into 3 equal portions and form into patties
3. In a grill pan, cook your burgers over medium-high heat for 5 minutes per side or until cooked
4. Meanwhile, place burger buns on a rack in the oven.
5. Bake for 3 – 5 minutes at 375 degrees
6. Mix the coleslaw ingredients and spread a generous amount on the cut side of the buns
7. Top the coleslaw with a burger patty, cheese, pickled onions and finally the bun tops
