LEMON, PEACH AND ALMOND CHIA BREAKFAST POTS

This recipe keeps you fuller for longer and a small portion is more than enough! Prep the chia breakfasts in small jars with lids and have an amazing grab-and-go breakfast ready for the whole family in no time!

Cooking time: 20 minutes

Total time: 35 minutes

Serves 4

INGREDIENTS

For the Lemon Chia Pudding:

125ml (1/2 cup) chia seeds

375ml (1 1/2 cups) unsweetened almond milk

125ml (1/2 cup) coconut yoghurt

10ml (2 tsp) vanilla essence

Zest of 1 lemon

For the Peach Puree:

6 dessert peaches

30ml (2 Tbsp) orange blossom honey

45ml (3 Tbsp) water

Garnish:

45ml (3 Tbsp) almond flakes, toasted

Fresh or pickled peach slices

METHOD

For the Lemon Chia Pudding:

Combine all ingredients in a medium mixing bowl and mix well. Cover with cling wrap and place the mixture in the fridge for about 2 hours or overnight.

For the Peach Puree:

Halve the peaches and remove the pips. Chop and place the peaches in a small saucepan with the honey and water. Cook on a low heat for about 15-20 minutes or until soft and sticky. Remove from the heat and allow to cool completely before placing it in your Breville Boss to Go. Blend until you have a smooth and silky puree.

To Assemble:

Once the chia is soaked and your peach puree is ready, it is time to assemble your beautiful chia breakfast pots.

You can mix the peach puree with some of the chia mixture to have a two-tone effect in your breakfast pots, or you can decide to layer the chia with the puree for colour blocking. There is no right or wrong way to assemble your breakfast pots.

After layering the chia and puree in your glasses or jars, garnish with a dollop of coconut yoghurt, toasted almond flakes and fresh or pickled peaches.
