Makes about 25 truffles


For the Speckled Egg Truffles:

230 g dark chocolate

125 ml (1/2 cup) cream

5 ml (1 tsp) vanilla paste

30 ml (2 Tbsp) Magnificent Barista Boys Salted Caramel Latte Powder

1 bar Artisanal Flavour Union Marshmallow Soft Toffee Bar

125 ml (1/2 cup) speckled eggs, chopped

For the Garnish:

Cocoa powder, for dusting

Speckled eggs, to serve


For the Speckled Egg Truffles:

Finely chop the dark chocolate and place in a bowl. Place the cream in a small saucepan and heat up to a simmer. Pour the warmed cream over the chopped chocolate and mix well until the chocolate has melted. Add the vanilla paste, caramel latte powder, marshmallow toffee bar and speckled eggs and mix until well combined.

Place the mixture in the fridge for about 10 minutes or until set enough to handle. Once set use a 15 ml (1 Tbsp) measuring spoon and scoop some of the mixture and roll in ball. Place the truffles back into the fridge.

For the Garnish: Dust the truffles with cocoa powder and serve with extra speckled eggs.
