MIXED PICNIC TOASTIES
The simplest picnics are the best and nothing could be simpler than a board full of toasted deliciousness, each one to be savoured.
Serves 2
INGREDIENTS
1 large baguette
olive oil for toasting
Fish options:
100g Lightly smoked trout ribbons
4 asparagus spears
Pickled whole white onion, quartered
2 teaspoons horseradish cream
4 teaspoons snoek pate
1 pear, sliced
Parmesan shavings
Crushed black pepper
Vegetarian option:
50g goats cheese
50g walnuts
2 tablespoons honey
Meat option:
4-6 rashers crispy bacon
1 roasted red pepper
4 teaspoons garlic aioli
METHOD
Slice the baguette, drizzle with olive oil and toast in a pan or in the oven at 200’c until golden on both sides.
Assemble the various toasties, place on a wooden board and enjoy with a glass of wine.
