12 shucked oysters

Micro greens for garnish

Red Onion Salsa

1 large red onion, finely chopped

1TBS mustard seeds

50g sugar

20g gherkins, finely chopped

200ml red wine vinegar

10g parsley, finely chopped

15ml olive oil


Place the onion and gherkin in a pot with the mustard seeds, red wine vinegar and the sugar. Bring to a simmer and allow it to reduce by half.

Finish off with finely chopped parsley and olive oil, mix well.

Top the shucked oysters with the salsa and garnish with micro greens.
