PERUVIAN TUNA CEVICHE WITH NACHO CHIPS
I visited Lima, Peru when I shot Girl Eat World a few years ago and the ceviche there is served with a Leche de Tigre sauce – a citrusy, spicy, fish blend that pairs perfectly with the ceviche. I’ve paired this with some local nacho chips from Santa Anna’s, made right here in Stellenbosch.
Serves 4

INGREDIENTS
For the Ceviche:
100g sweet potato, peeled and cubed
15ml (1 Tbsp) avocado oil
1 ear of sweet corn, charred and husked
500g tuna, diced
1 green chilli, finely sliced
1 red onion, sliced
Fresh coriander, to serve
Oryx salt, to taste
Santa Anna Nacho Chips, to serve
Fresh lime wedges, to serve
For the Leche de Tigre:
160ml (2/3 cup) fresh lime juice
2 garlic cloves, crushed
15ml (1 Tbsp) fresh coriander, chopped
2 green chillies, finely sliced
4 ice cubes
1/2 red onion, roughly chopped
Oryx salt, to taste

METHOD
For the Ceviche:
Heat oven to 180°C. Coat the sweet potato in the avocado oil and bake for 45 minutes or until cooked – they should be crisp and tender.
On an open flame, char the sweet corn.
Once it has taken on some colour, dehusk the corn by running the knife down the cob.
In a mixing bowl, combine the sweet potato, corn, tuna, chilli, red onion and coriander. Season to taste.
For the Leche de Tigre:
Add the lime juice, garlic, coriander, chilli and ice cubes to a blender and blend. Place the onion into the blender and pulse. Strain with a sieve.
Taste for seasoning.
To Serve:
Divide the ceviche between bowls and pour over the Leche de Tigre. Serve with fresh wedges of lime, extra coriander and nacho chips.
