Makes 8-10 croquettes


For the Paprika Mayonnaise:

  • 180 ml (3/4 cup) store-bought mayonnaise 
  • 5 ml (1 tsp) smoked paprika
  • 2 garlic cloves, peeled and creamed10 ml (2 tsp) fresh lemon juice

For the Croquettes:

  • 450 g mashed potato 
  • 10 cubes of cheddar cheese (1.4 centimetres) 
  • 90 g all-purpose flour 
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper 
  • 1 egg, beaten 
  • 100 g panko breadcrumbs 
  • 15 ml (1 Tbsp) paprika 
  • Micro leaves, to serve
  • Lemon wedges, to serve


For the Paprika Mayonnaise:

Mix all the ingredients together in a medium-sized bowl and set aside until needed. 

For the Croquettes:

Preheat the oven to 180°C and prepare a flat baking tray. Place the flour, salt and pepper in one bowl and mix well. Place the egg in a second bowl and whisk lightly. Place the breadcrumbs in a third bowl. Sprinkle the smoked paprika onto the breadcrumbs.

Take a heaped tablespoon of mashed potato and flatten it in your hand. Place a cube of cheese in the middle and wrap the mashed potato around it. Shape it into a cylinder or ball.

Dip the croquette into the flour, then into the egg and finally into the breadcrumbs, ensuring it is completely covered. Place on the baking tray and repeat with the rest of the mashed potato, making sure there is a little space between each croquette. Put in the oven and bake for 12-15 minutes or until the croquettes are golden brown. Take them out of the oven and leave to cool for a few minutes before serving.

Garnish with micro greens and parsley and serve with the paprika mayonnaise and lemon wedges.
