  • 2 cups shredded pulled pork (can be made ahead of time in a pressure cooker) 
  • 8 store bought corn tortillas


  • 2 cups red and green cabbage thinly sliced
  • 2 carrots shredded
  • 1/2 cup cilantro roughly chopped
  • 1 jalapeno diced
  • Juice of 1 lime
  • Salt and pepper to taste

Avocado sauce

  • 1 avocado
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1/4 teaspoon kosher salt

Red onion pickle

  • 1 large red onion thinly sliced
  • 3/4 cup apple cider vinegar
  • 1 teaspoon fine sea salt
  • 1–2 tablespoons sugar



1.  Mix all the ingriedients together and set aside

 Avocado sauce

  1. Add all the ingredients to a food processor and blend until creamy, set aside.

Red onion pickle

  1. Place the thinly-sliced onions in a jar, pour the vinegar, salt and sugar on top of the onions. Close the lid and shake until everything is combined.
  2. Let the onions marinate for 30 minutes and serve immediately or refrigerate in a sealed jar for up to 2 weeks.

Assemble Tacos

  1. Serve the pulled pork, slaw, avo sauce and red onion pickle in bowls and let your guest build their own taco.
  2. Serve with lemon wedges and extra coriander on the side
