PULLED PORK TACOS
INGREDIENTS
- 2 cups shredded pulled pork (can be made ahead of time in a pressure cooker)
- 8 store bought corn tortillas
Slaw
- 2 cups red and green cabbage thinly sliced
- 2 carrots shredded
- 1/2 cup cilantro roughly chopped
- 1 jalapeno diced
- Juice of 1 lime
- Salt and pepper to taste
Avocado sauce
- 1 avocado
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1/4 teaspoon kosher salt
Red onion pickle
- 1 large red onion thinly sliced
- 3/4 cup apple cider vinegar
- 1 teaspoon fine sea salt
- 1–2 tablespoons sugar
Method
Slaw
1. Mix all the ingriedients together and set aside
Avocado sauce
- Add all the ingredients to a food processor and blend until creamy, set aside.
Red onion pickle
- Place the thinly-sliced onions in a jar, pour the vinegar, salt and sugar on top of the onions. Close the lid and shake until everything is combined.
- Let the onions marinate for 30 minutes and serve immediately or refrigerate in a sealed jar for up to 2 weeks.
Assemble Tacos
- Serve the pulled pork, slaw, avo sauce and red onion pickle in bowls and let your guest build their own taco.
- Serve with lemon wedges and extra coriander on the side
