All the decadent deliciousness of waffles made with healthier ingredients for a guilt-free binge. 

Serves 2


3/4 cup red & white quinoa, cooked

1 cup cake flour

¼ cup castor sugar

1 teaspoon baking powder

1/4 teaspoon salt

1 cup milk

1 large egg

50g unsalted butter, melted and cooled

For serving:

2 bananas

Fresh coconut, grated

For the syrup:

1/4 cup chia seeds

1/2 cup coconut sugar

1/2 cup coconut water


To make the waffles, preheat the waffle iron. Place all the dry ingredients into a bowl and mix to combine. Whisk the milk, egg and butter together in a separate bowl. Make a well in in the centre of the dry ingredients and pour in the wet ingredients. Whisk to combine.

Lightly spray the waffle iron with non-stick spray and place 3 large spoonful’s of batter into the centre of the iron, gently close the lid and cook until golden brown. Serve with bananas, coconut and chia syrup.

For the syrup:

To make the syrup place the coconut sugar and water in a small pot and bring to a boil slowly. Reduce the heat and simmer for 5 minutes until reduced slightly.

Remove from the heat and add chia seeds. Set aside to cool.
