1 Tbsp olive oil

Juice and zest of 1 lemon

2 Tbsp za’atar

1 tsp garlic powder

1 tsp salt

½ tsp ground black pepper

1 whole chicken

4 medium artichokes

3 Tbsp olive oil

60ml lemon juice

1 tsp salt

½ tsp ground black pepper


Preheat both compartments of the air fryer to 170C.

In a bowl, mix together the olive oil, lemon juice, zest, za’atar, garlic powder salt and pepper. Keep a third of the mixture aside and pour the rest over the chicken and massage it in well.

Place the chicken into the air fryer and cook for about 40 minutes, until golden and crisp, and the chicken is cooked through. Half way through cooking, baste the chicken with some of the reserved marinade.

For the artichokes, wash them thoroughly. Remove the tough outer leaves. Cut the tip off the top and trim the stem down.

Slice the artichokes in half lengthways. Put them in a bowl with the olive oil, lemon juice, salt and pepper.  Toss well.

Place them in the preheated airfryer and cook for about 12 to 15 minutes. Serve with the petit poussin.
