RECIPE: GRILLED AUBERGINE, BUFFALO MOZZERELLA, CAPERS & POMEGRANATE

Ingredients:

  • 3 large aubergines 
  • 1 large ball of buffalo mozzarella
  • 150g large capers
  • 100g pomegranates 
  • Drizzle of lemon olive oil
  • Squeeze of lemon juice

Method:

  • Slice the aubergine into 2cm slices lengthways and then score in a cross hatch pattern, salt and let it stand for 20 minutes. Using a damp towel take of the excess water and then add olive oil for grilling
  • On a medium to high heat pan, grill the aubergine slices until golden brown. 
  • Plate your side by layering aubergine, torn mozzarella, pomegranate and capers. 
  • Drizzle with olive oil and a squeeze of lemon juice. 
  • Season with black pepper and salt.
