1 Tbsp olive oil

1 Tbsp of butter

2 small red onions, thinly sliced

½ tsp thyme leaves

½ tsp salt

¼ tsp ground black pepper

1 Tbsp butter, softened

8 slices of sourdough

2 Tbsp wholegrain mustard

8 slices of salami

350g mozzarella, grated


Prepare your fire for the braai broodjies.

Heat the olive oil and butter in a pan over a medium heat. Add the onion, thyme, salt and pepper. Allow to sauté slow, stirring often. Turn the heat down if necessary. Cook until the onions are completely soft and caramelised, then remove from the heat.

Spread the softened butter onto one side of each piece of sourdough. Spread over the wholegrain mustard on four of the slices. Top the mustard slice with caramelised onion, followed by 2 slices of salami each, then the mozzarella. Place the other buttered slice of bread on top of each.

Put the sandwiches in a closing braai grid. Place them over a low heat on the fire. Watching them carefully, and turning often, grill the braai broodjies until beautifully golden.
