A combination of Kale, Coconut, Apple and Ginger makes this salad the most refreshing part of your day. Make sure to pack a little bit extra.
Serves 2
INGREDIENTS
3 Cups Kale or Cavolo Nero, roughly chopped
2 Apples
¼ Red cabbage
8 Radishes, thinly sliced
2 Avocados
10 Brussel sprouts
¼ Cup fresh coconut, grated
1 Thumb-sized piece ginger, grated
For the dressing
¼ Cup coconut cream
2 Tablespoon coconut oil
3 Fresh limes, juiced
½ Cup fresh herbs (parsley, dill, chives)
2 Teaspoons coconut sugar
Salt and pepper to taste
METHOD
To make the salad, thinly peel pieces of the apples using a serrated vegetable peeler. Thinly slice the brussel sprouts, shred the cabbage and half the avocados. Toss the kale, apples, cabbage and brussel sprouts in a large serving bowl. Top with avocado halves and radishes. Pour over dressing and sprinkle with grated ginger and coconut.
To make the dressing simple whisk all the ingredients together or place in a jar and shake well. Season and serve.
