80 ml (1/3 cup) granulated sugar 

1 lime 
1 ruby grapefruit

250 ml (1 cup) grapefruit juice 
2 rosemary sprigs 
250 ml (1 cup) sparkling water or lime flavoured sparkling water 
2 shots of rum or vodka 
20 g mint leaves 
Handful of ice

Pour the granulated sugar on a plate. Swipe the rim of the glasses with a lime wedge and dip the rim in the granulated sugar. Set aside.

Peel the grapefruit using a vegetable peeler or sharp knife. Cut the grapefruit into segments.

Divide the segments into two Mojito glasses. In a medium sized pot, pour in the remaining sugar along with the grapefruit juice. Cook for 15 minutes, stirring occasionally until the sugar has dissolved and the juice has thickened. Set aside to cool.

Thinly slice the lime and add to the glass, along with ice cubes and a rosemary sprig.

Gently pour the rum or gin into a glass, add the grapefruit syrup and fill with sparkling water. 

Garnish with mint leaves and serve cold.
