120g cake flour

Pinch of salt

10ml baking powder

2,5ml bicarbonate of soda

5ml ground ginger

5ml ground nutmeg

5ml ground cinnamon

45g castor sugar

60g butter, room temperature + cubed

60g golden syrup

Icing sugar, to serve


Preheat the oven to 160C & grease two standard baking trays.

Sift the flour, salt, baking powder, bicarbonate of soda, ginger, nutmeg, and cinnamon.

Add the sugar and mix in. Then rub the butter.

Warm up the golden syrup (on the stove or microwave) then add to the mix to form a biscuit like dough.

On a well floured surface, roll out the dough until it is 1cm thick, then cut your desired shapes using a cookie cutter.

Place the cut ginger biscuits on the greased trays and bake for 10min until golden.

Allow to cool, then sprinkle with icing sugar to serve.
