We have used a range of Hip containers as our Bento Boxes.


For the Sweet and Sour Prawns:

15 ml (1 Tbsp) canola oil

2 small garlic cloves, finely minced

2 cm fresh ginger, peeled and grated

1 small red chilli, chopped

1/2 red bell pepper, seeds removed and sliced thinly

1/2 yellow bell pepper, seeds removed and sliced thinly

1 small can pineapple – reserve 100 ml juice

15 ml (1 Tbsp) rice wine vinegar

45 ml (3 Tbsp) soy sauce

1 ml (1 Tbsp) corn flour (change to 15 ml)

30 ml (2 Tbsp) water

20 large prawns, cleaned

For the Nori Sushi Rice:

250 ml (1 cup) sushi rice

250 ml (1 cup) water

15 ml (1 Tbsp) rice wine vinegar

10 ml (2 tsp) sugar

2.5 ml (1/2 tsp) salt

1 nori sheet, chopped finely

10 ml (2 tsp) sesame oil

30 ml (2 Tbsp) black and white sesame seeds, toasted

To Assemble:

125 ml (1/2 cup) edamame beans

1 avocado, cut into slices

Lemon juice

1/4 pineapple, cut into stars


For the Sweet and Sour Prawns:

Heat a pan with the oil over a low-medium heat. Sauté the garlic and ginger for 1-2 minutes while stirring. Add the chilli, bell peppers and pineapple, sauté for 2-3 minutes.

Meanwhile combine the pineapple juice, rice vinegar (‘rice wine vinegar’ in ingredients), soy sauce, corn flour and water and mix well, add the mixture along with the prawns to the bell pepper mixture and cook for about 5-8 minutes or until thickened.

Once thickened add the prawns and remove from the heat after 5 minutes Season to taste. – the prawns have already been added in previous instruction.

For the Nori Sushi Rice:

Rinse the rice very well until the water runs clean from the rice.

Place the rice and water in a small saucepan on a low heat with the lid on for about 10-15 minutes.

In a separate small saucepan combine the rice wine vinegar, sugar and salt. Allow the sugar and salt to dissolve. Once the rice is cooked and the water has been absorbed add the rice *wine vinegar and stir the vinegar, nori and sesame oil through with chopsticks.

Once cooled shape the rice into small bites of your preference and cover some of them in the sesame seeds and top with a sprinkle of nori.

To Assemble: Place the prawn mixture and the nori rice in the bento box followed by edamame beans, avocado, pineapple stars and top with sesame seeds, to taste. – Missing lemon juice ingredient.
