THE GREEN GODDESS PIZZA
This is one pizza you are allowed to have guilt free. In fact, it’s so healthy, you will actually feel good about yourself for having this for lunch.
Makes 2
INGREDIENTS
For the pizza bases
250g self-raising flour
250g double-cream yoghurt
1 tsp baking powder
1 tsp salt
For the toppings
1 avo, mashed
3 baby marrows, sliced into ribbons
Handful baby spinach
Herbs and salad leaves of your choice
¼ tsp salt
¼ tsp pepper
For the green-tea dressing
¾ cup double-cream yoghurt
½ cup chopped parsley
¼ cup chopped spring onions
2 tbsp lemon juice
1 green teabag, leaves only
1 clove garlic, peeled and crushed
½ tsp salt
METHOD
For the pizza bases
- Preheat oven to 180°C.
- Combine ingredients. Knead until the dough is springy. Add a few tablespoons
of flour if it is too sticky, or yoghurt if too dry. - Roll out into 2 bases. Let them rest for 5 minutes.
- Transfer to baking trays and brush with oil. Bake for 20–25 minutes, until golden. Leave to cool for 10 minutes.
For the toppings
- Spread bases with avo. Top with baby marrows, spinach, herbs and salad.
For the green-tea dressing
- In a blender, combine all the ingredients until smooth.
- Drizzle dressing over the pizzas and serve.
