Ingredients 

For the Roasted Bell Pepper Sauce: 

  • 2 red bell peppers 
  • 2 yellow bell peppers 
  • 50 g sundried tomatoes marinated in olive oil 
  • 30 ml (2 Tbsp) reserved olive oil from the sundried tomatoes 
  • 1 sprig oregano, picked 
  • Salt and black pepper, to taste  

For the Crispy Halloumi: 

  • 300 g halloumi cheese
  • 250 ml (1 cup) flour 
  • 15 ml (1 Tbsp) smoked paprika 
  • 3 eggs 
  • 500-750 ml (1 cup) panko breadcrumbs 
  • Salt and black pepper, to taste 
Air Fried perfection – crispy halloumi sticks.

Method 

For the Roasted Bell Pepper Sauce: 

Place the bell peppers over an open flame scorching the skins – do not be afraid to blacken the skins all over the bell peppers. Place the warm peppers in a glass bowl and cover with cling film, this will steam, and the skins will peel off easily.  

Remove the skins from the peppers and cut the bell peppers into strips removing the core and seeds. Combine the peppers, sundried tomatoes, olive oil and oregano and season to taste. 

Place in the air fryer on 180°C for about 12-15 minutes or until cooked and roasted.  

Once cooked blend until your desired consistency and season to taste. 

For the Crispy Halloumi: 

Cut the halloumi cheese into 1 cm thick fingers. Combine the flour, smoked paprika and seasoning in a plate or shallow bowl. 

Crack and beat the eggs into a small bowl. And in a separate plate or shallow bowl place the panko breadcrumbs and season to taste. 

Dust the halloumi fingers into the seasoned flour, shaking off any excess flour, cover in egg and then in the breadcrumbs. 

Place the halloumi in the fridge until ready to cook. 

Place the halloumi fingers in the air fryer, beware not to pack the halloumi on top of each other or to overcrowd the basket. 

Cook on 200°C for about 10 minutes, turning them halfway through the cooking process. 

Make sure to serve the halloumi hot with the roasted bell pepper sauce.
